At its heart, Alua E Comidas is committed to authenticity, operating from historic Cunha Street. Despite challenges, the shop maintains its dedication to preserving and sharing Macanese gastronomy's time-honoured recipes. The mission of this series is to show and preserve the history and identity of Macao through the old shops in danger of disappearing, seeking testimonies from the older generations of an ever-changing city and development.

Aluá, Macau's hidden Christmas gem!

Originating in the mid-1800s, this rare dessert is steeped in history and tradition. Crafted by Portuguese artisans in Macau, Aluá became the highlight of the holiday season. Families would gather dozens to share as treasured gifts with loved ones, embodying the spirit of Christmas in each bite.

The making of Aluá is a tale of secrecy and dedication. Its recipe was once a closely guarded secret, known only to a select few who wouldn't even share it with their own kin. This led to a fear that its unique taste and texture might be lost forever. But, through years of trial and experimentation, a recipe nearly matching the original was born. The modern twist? Switching from the laborious hand-mixing of the 1800s to the convenience of electric mixers, making the process a bit less exhausting.

 

Despite this, crafting Aluá remains an intricate, three-day labor of love, demanding continuous stirring and enduring high temperatures - a true testament to the dedication behind this festive treat!
